Role
We are seeking an experienced, creative and highly skilled Sushi Chef de Cuisine to join Janu Tokyo. This role is suited for a passionate professional who thrives in a refined luxury environment and brings exceptional craftsmanship together with a deep respect for Japanese tradition and guest experience. As Sushi Chef, you will lead the sushi culinary experience, crafting dishes that reflect Janu’s vibrant spirit and commitment to excellence. You will play a key role in delivering memorable dining moments through precision, creativity and impeccable attention to detail while fostering a collaborative and inspiring kitchen culture.
This role is about mastering the art of sushi every day, mentoring team members and contributing to a dining experience defined by authenticity, innovation and exceptional hospitality.
Responsibilities
- Prepare and present high-quality sushi and Japanese dishes in accordance with Janu standards
- Ensure consistency, quality and artistic presentation across all sushi offerings
- Select, handle and manage premium seafood and seasonal ingredients with expert knowledge and care
- Maintain high food safety, hygiene and sanitation standards in compliance with local regulations
- Collaborate with kitchen leadership to develop seasonal menus and innovative sushi concepts
- Train, mentor and develop junior chefs and kitchen team members
- Monitor ingredient quality, freshness and inventory levels to support operational efficiency
- Work closely with front-of-house teams to deliver seamless and personalised guest experiences
- Uphold luxury hospitality standards through professionalism, precision, and teamwork
- Contribute to a positive kitchen culture focused on excellence, creativity and continuous improvement
Requirements
- Minimum 15 years of practical experience as a Sushi Chef or Senior Sushi Chef
- Experience working in luxury hotels, high-end restaurants or similar service environments
- Strong knowledge of traditional and modern sushi techniques, knife skills and seafood preparation
- Deep understanding of Japanese culture, seasonality and ingredient sourcing
- Proven ability to maintain high standards under pressure in a fast-paced environment
- Excellent leadership and communication skills
- Advanced business-level Japanese proficiency (CEFR C1 or higher)
